St. Patrick’s Day is officially here, which means there’s no better time than now to enjoy a shamrock shake. While McDonald’s originally made the drink famous (the first one actually dates back to 1967!), it’s really easy to make a vegan shamrock shake at home with planet-friendly ingredients.
The traditional shamrock shake is made up of McDonald’s vanilla ice cream and an artificial mint syrup. To recreate the same texture and flavor at home, you’ll only need a handful of ingredients: dairy-free vanilla ice cream, your plant-based milk of choice, and peppermint extract. While you can opt for a natural green food coloring for the bright hue, we have another trick: use your leftover spinach. You’ll get a prettier color, and you won’t even taste those leafy greens—promise.

Vegan Shamrock Shake
Ingredients:
2 cups dairy-free vanilla ice cream
1/2 cup plant-based milk
handful of spinach for color
1/2 tsp peppermint extract
vegan whipped cream
Instructions:
1. Add ice cream, milk, spinach, and peppermint extract to a blender.
2. Pour into a glass and top with vegan whipped cream.
