There are a bunch of veggies in the fridge that are about to go bad, and you're trying to figure out how to use them in time. Well, a delicious solution is here: Making a batch of TikTok-famous rice paper dumplings.

Lisa Kitahara, the creator of Okonomi Kitchen, shared the idea last year. Since then, her video has garnered nearly 12 million views and has inspired thousands of others to make their own versions. Some recipes are just too good to stop making on a regular basis (hello, salmon rice bowl!), and rice paper dumplings are one of 'em.

So, what are rice paper dumplings, exactly? Making traditional dumplings from scratch can be pretty time-consuming. To speed up the process, this viral version swaps dough for rice paper, which is commonly used when preparing summer rolls. Kitahara says doing so is a quick and easy way to get the mouth-watering flavor and crispiness of dumplings in record time.

So grab your leftover veggies and some rice paper, and get to work. You'll have the crispy dumplings of your dreams before you know it.

Vegan Rice Paper Dumplings Recipe

Ingredients:

Veggies of choice (try carrots, scallions, and cabbage)
Rice paper wrappers
Firm or extra-firm tofu

Instructions:

1. Start by taking a look inside your fridge and thinking about which veggies could work in your rice paper dumplings. Some of the best options include carrots, scallions, and cabbage.

2. After shredding the carrots and chopping the scallions and cabbage, add them to a bowl with tofu, salt, and pepper.

3. Break apart the tofu with your hands as you mix everything together. Once combined, your filling is complete.

4. Dip a sheet of rice paper in a bowl of warm water. After a few seconds, remove it and place it on a flat surface.

5. Immediately add a spoonful of filling to the center of the rice paper wrapper.

6. Fold the sides in, creating a rectangle shape around the filling. Repeat with a second rice paper wrapper, double wrapping your dumpling so it's extra crispy.

7. Place your dumplings in a hot pan with a little oil, or "fry" them in an air fryer.

8. After both sides are golden brown and crispy, remove and enjoy them with your favorite dipping sauce!
