The resurgence of the ‘90s cocktail has furthered the popularity of the classic martini. Meanwhile, Starbucks’ pumpkin spice latte changed the face of fall in 2003—the company has sold more than 600 million PSLs since its debut.

How to Make a Pumpkin Pie Martini
IngredientsDrink:
2 oz vanilla vodka
2 Tbsp pumpkin purée
2 Tbsp vegan pumpkin creamer
1 Tbsp maple syrup
Rim + Topping:
Coconut sugar
Pumpkin spice
Vegan whipped cream (optional)
Cinnamon stick
Instructions
Rim:
1. Mix sugar and pumpkin spice in a small bowl. (the amount varies depending on how many cocktails you plan on making.)
2. Pour mixture onto a plate.
3. Use a light layer of maple syrup to moisten the rim. Dip in sugar mix.
Cocktail:
1. Combine all ingredients in a shaker, add ice. and shake well to ensure purée is fully incorporated.
2. Pour cocktail in glass. Top with your favorite vegan whipped cream and a cinnamon stick for the full fall effect.
