With summer right around the corner, you may be starting to crave a warm weather favorite: ice cream. But while those scoops from your go-to ice cream shop are mouth-watering, this homemade cookie dough nice cream recipe is just as good (and better for the planet).
Nice cream—which is essentially ice cream, minus the dairy—is a trend that’s not going anywhere anytime soon. Aside from its creamy texture and great taste, it’s also made entirely of wholesome ingredients. This recipe from Stephanie Manzinali, the vegan food blogger behind @that.veganbabe, takes things to an entirely new level by combining two of your favorite treats: ice cream and cookie dough.
Manzanalli’s vegan and gluten-free recipe is incredibly easy to whip up: You just need bananas, almond butter, maple syrup, mini chocolate chips, and a few other ingredients. “If you haven’t tried nice cream yet, this is a great one to start with. It’s super sweet and satisfying,” she says. “Store it in the freezer, or eat right away.”
Yep, sounds pretty nice to us (*wink*). Here’s how to make the cookie dough nice cream recipe for yourself.
Cookie Dough Nice Cream Recipe
1/2 cup almond flour
1/4 cup maple syrup
3 Tbsp almond butter
1 tsp vanilla
2 Tbsp mini chocolate chips
Nice Cream Ingredients:
4 frozen bananas
1 Tbsp peanut butter
1/2 tsp vanilla
1/2 tsp cinnamon
Splash of plant milk (as little as possible to get a thick consistency)
1. Add the cookie dough ingredients to a blender (except the chocolate chips) and blend until smooth. Mix in the chocolate chips.
2. Add all the nice cream ingredients to a blender and blend until smooth.
3. Stir your cookie dough pieces into the nice cream mixture.
4. Enjoy right away, or store it in the freezer in an airtight container.
