Sour cream is a refrigerator essential. It’s a must-have for burritos, sandwiches, creamy dips, and beyond. What if you could make a low-waste version at home that’s better for the planet than what’s sold in stores?

Typical sour cream comes with its fair share of wasteful packaging: a plastic container, lid, and a thin peel-off plastic film. Then the sour cream itself is typically made with dairy, which has a hefty carbon footprint. By making a vegan sour cream at home with ingredients you already have in your pantry, you’ll be able to whip up an eco-friendly topping for all your favorite dishes.

Bailey Ruskus, the chef and health coach behind Chef Bai, shared a mouth-watering sour cream recipe that’s racked up nearly a million views on TikTok. While most vegan sour cream options contain nuts, Ruskus decided to make a more sustainable option with oat milk and tofu that works for more people. (Yep, we told you—you can truly use tofu for everything!)

“I first knew I could go vegan when I finally figured out how to make sour cream and make it so delicious,” Ruskus says. “This one is actually completely free of nuts. But don’t worry—it’s still high in protein and doesn’t skimp on flavor.”

Creating the recipe is simple. Grab a blender and add a handful of ingredients, including tofu, oat milk, and nutritional yeast. Blend it up, store it in a reusable container, and use it on everything your heart desires. Here’s how to make Ruskus’ vegan sour cream, step by step.

Easy Vegan Sour Cream Recipe

Ingredients:

1 block firm tofu
1/4 cup oat milk
1/2 tsp salt
1/2 tsp nutritional yeast
Juice of one lemon
Splash of white wine vinegar

Instructions:

1. Put all the ingredients in a blender.
2. Blend until creamy and smooth.
3. Store in a reusable container in the fridge.
4. Add it to your favorite dishes and enjoy!
