This Vegan Feta Recipe Is the Perfect Eco Cheese Swap
vegan-feta-recipe-1

Feta cheese is so versatile. You can crumble it into salads, toss it into pasta dishes (have you tried Baked Feta Pasta, yet?), and even use it in pies. If you’re looking for a dairy-free swap that’s better for the planet, this vegan feta recipe is the perfect option.

With tofu as the main ingredient in this plant-based substitute, vegan feta cheese can be just as delicious and protein-packed. The fact that you can make it entirely in a mason jar is just the cherry on top. Plus, have we mentioned it actually crumbles like the real deal?

Stephanie Manzinali, the vegan food blogger behind @that.veganbabe who created the vegan feta recipe, says it’s nothing short of game-changing. One look at it, and you’ll believe her. “You can store this in the fridge, add it on top of your salads, or eat it straight out of the jar,” she wrote on Instagram.

Serves two

Ingredients

Block of extra-firm pressed tofu
1/4 cup olive oil
3 Tbsp lemon juice
1 Tbsp apple cider vinegar
1 Tbsp nutritional yeast
1 tsp onion powder
1/2 tsp garlic powder
1/4 tsp dill
1/2 tsp oregano
1.5 tsp salt

Instructions:

1. Press your tofu, then cut it into cubes.

2. Add your marinade ingredients into a mason jar (make sure it’s big enough!), and shake it up until everything is combined.

3. Add the tofu back into the mason jar and toss until the tofu is completely coated.

4. Let it sit for a few hours, or marinate overnight, to soak in the flavor.

5. Enjoy!
