Vegan eggs are becoming increasingly popular, too, with JUST Egg being offered everywhere from Walmart to Costco.
Here’s the thing, though: Vegan eggs aren’t just something you can buy at the grocery store. Kelton Mattingly, the plant-based chef behind the TikTok account Kelton’s Kitchen, says you can make a JUST Egg dupe right at home with a handful of ingredients. Doing so isn’t just great for the planet—it also cuts down on plastic waste.
“Did you know it takes over 50 gallons of water to produce one egg? And the average human eats almost 300 eggs per year. So we’re talking 15,000 gallons of water per year per person,” Mattingly says in his video. “The next best option? Vegan eggs. This version is plastic-free compared to the store-bought alternative.”
Making vegan eggs at home seems complicated, but it’s way easier than you think. “Just add split mung beans, oil, vegan milk, tapioca starch, turmeric, nutritional yeast, garlic powder, and black salt, which adds the egg flavor,” he says. “Blend it up and cook it however you like your eggs.” You can make an omelet, scramble them—whatever you’re in the mood for.

Vegan Eggs Recipe
Ingredients:
1 cup split mung beans
1 Tbsp olive oil
3/4 cup vegan milk
1 tsp tapioca starch
1/2 tsp turmeric
1 Tbsp nutritional yeast
1/4 tsp garlic powder
1/2 tsp black salt (aka kala namak)
Instructions:
1. Soak the split mung beans in water overnight.
2. Rinse and drain the mung beans.
3. Put all of your ingredients in a blender. Blend until smooth.
4. Cook your vegan eggs just like you would typical eggs. You can make omelets, scrambled eggs, and more.
