“This is a bit of a cop-out, because Ariana is amazing. She’s already vegan and this is the exact salad recipe she loves,” says Bodrug. Not only is this salad super easy to make, but it also makes for a great summer dish. “It happens to be the perfect summer salad with sweet dates and strawberries. It’s also packed with protein, edamame, and tofu, so it’s great for a work lunch as well.”
