5 Eco-Friendly Breakfast Recipes To Detox and Reset With in the New Year

A new year means new eco-friendly breakfasts (or snacks) to try. The following five recipe ideas have been collected from our community’s massive recipe database, which can be found here. Take your pick from the selection below and get ready to perform an oatmeal, bagel, or parfait cheers during the new year!

1. Oatmeal Bowl

This heavenly little bowl of warmth is the perfect meal to kick off the new year in a positive way. Here are the ingredients:

  • ¼ cup rolled oats
  • ½ cup water
  • 1 tsp cocoa powder
  • 1 tbsp peanut butter
  • ½ banana
  • Nuts (optional)
  • A squeeze of honey

Follow the instructions on your oatmeal package to prepare, adding 1 tbsp of cocoa powder to it. Remove from the heat and top with peanut butter, banana, nuts, and honey. Take a few aesthetic pictures for social media and dive in. 

2. NY Style Bagels

This recipe is a bit more complex, but why not dive into the new year with an impressive homemade bagel recipe up your sleeve? It’s the perfect way to fool your friends and family into thinking you are a professional baker and will eventually become a tool that will get you towards true master chef. Plus, it gives you some time to focus in the kitchen and keep you zen and healthy. Here are the ingredients:

  • 1 and ½ cups warm water
  • 2 and ¾ tsp instant or active dry yeast*
  • 4 cups bread flour (spoon & leveled), plus more for work surface and hands*
  • 1 tbsp granulated sugar or packed light or dark brown sugar (or barley malt syrup)*
  • 2 tsp salt
  • Coating the bowl: nonstick spray or 2 tsp olive oil
  • Egg wash: 1 egg white beaten with 1 tbsp water

For Boiling:

  • 2 quarts water
  • ¼ cup honey

This recipe requires ten fairly lengthy steps, but the end result is totally worth it. In short, you’ll need to make the dough by adding all the ingredients into a stand mixer (excluding the yeast which needs five minutes to rise), now mix everything together including the yeast. Take it out and knead it for 4-5 minutes. Roll the dough into a ball and cover it, allowing it to rest at room temperature for 60-90 minutes.

Then punch the dough, ridding it of the air it accumulated while it was relaxing. Divide the dough into eight equal parts and make bagel shapes (i.e. balls with holes at the core). Add the water mixed with honey to a pot and allow it to boil. Drop the bagels in and cook each for two minutes, making sure to turn them at the halfway point.

Finally, preheat the oven to 425°F, brushing the egg wash on top of each bagel. Bake for 20-25 minutes. Let them cool, smother in nutella or cream cheese, and savor.

3. Yogurt Parfait With Fruit And Granola

Who doesn’t love a classic fruit and yogurt combo. This quick and easy recipe is perfect for a last-minute tasty, yet cute snack idea. Here are the ingredients:

  • Any yogurt flavor of your choice
  • Trader Joe’s Fruit and Seed Granola
  • A selection of different fruits
  • Honey
  • Cinnamon

Throw the first three ingredients into a glass or bowl, layering them how you prefer. Top with drizzled honey and sprinkled cinnamon and enjoy!

4. Green Smoothie

What screams classic detox more than a green smoothie? Or better yet, a tasty, eco-friendly green smoothie? This Instagram post submitted to us by one of our Brightly community members is pretty self-explanatory: simply combine everything in a blender and blend! Here are the ingredients you’ll need:

  • 1 cup pineapple
  • 1 banana
  • ¼ avocado
  • 1 cup spinach or kale
  • ½ cup coconut water

5. Vegan Cinnamon Rolls

This delicious recipe is awesome for any vegans out there with a sweet tooth. Plus, it only take 30 minutes! Here are the ingredients:
